Having the ability to allow certain products/items to be "optional" and allow them to be selected by contact before approval on an estimate like we can do on a full Contract Document/Proposal.

Have optional add-ons which can be selected with a check box. Selecting the check box updates the total estimate $ value.
One request shows as "Complete" back in 2024 but I don't see it in documentation or in the Settings how to make it a line item optional

This. 10000%. We are a home services business and we sometimes offer 2 different options (vinyl fence or wood fence.). Technically they are two different quotes housed under the same document. However, when the customer goes to sign it, whether they choose option A or option B, both options get checked.
This in turn throws off our "Sale Amount" which calculates the sum of everything checked.

This would be perfect for long-term services where customers can either pay month-to-month at full price or select a discounted price for a 6-month or 12-month bundle.
This allows customers to compare multiple pricing options side by side on the estimate/invoice sheet... and allows them to take their time thinking over it and convince themselves to select a more expensive bundled option due to the lower monthly price.
Even better if there could be an option to display "monthly cost" next to the 6mo or 12mo bundles so it's easy to see how much money you're saving each month in comparison to the month-by-month option.
This is perfect for after a consultation zoom call where you mentioned specific things and want to create a curated list of options to select from.
This is HUGE and I'm surprised GHL doesn't already have this feature.
