It would be fantastic if we could organize the Stripe products in folders so we don't have to scroll through a ton of stuff to find a particular item.

Yes, it would be very helpful if there were folder options to assist with sorting products in the product tab. Also, it would be nice to have an option to manage which products will show up in the store on each page separately. Everything else is amazing.

Sales & Marketing. as if there have function of sorting by collections in the products creation page, that will be a lot easier to find and manage all the products, especially for the ecom store that have over 100 items...
