Previously, when using Zapier, you could both add or update a contact and add a contact to a campaign or workflow using the same action. I'm not sure when this changed, but it appears that this is no longer the case. It looks like you need to have a Create/Update action, as well as an Add to Campaign action, to modify contact fields and add them to a workflow.
