We need a way to see how many people RSVP for an event, and be able to have a workflow trigger for event RSVPs/Registrations, so that we can create a set of customized reminder emails for each event.

yeah - this would be awesome.
Currently I'm using a product+funnel with limited inventory but at scale it's not a great solution.
