Would like the option to be able to clear out data in existing fields by being allowed to use Workflows update contact field and let us save nothing. Right now the system prevents this.

You can make a 'custom value' (title it whatever, but I use "blank") then leave the vale of the 'custom value' blank. Then enter the custom value in the spot, and that will work on on the "update contact" action, as well as the old "update/create opportunity" action, however it will not work on the newer "update opportunity" action. Hopefully that work around helps you achieve your goal.

Choose update contact field and select the custom field and update its value to 0. Great tool if you want to set binary values.

Ben Stallings: That would be great and it is nice for setting custom values but for my use case I have a field that is used in a workflow where the customer submits data every day 6 times a day, they do this for 7 days.
I have created custom fields for each time and each day currently 35 values.
I need to track all of this data on a weekly basis so each week I need the values to be cleared out otherwise I am creating a new workflow for each week and 35 new values for each week. You see how this could get messy.
Additionally, I have conditional logic set in place in the workflow that send reminders to the contact if the field is empty reminding them to submit the data. I present the entries to the client in a form each day. If I am unable to remove the data and make it blank then they will see the previous entry from the week before. Or if I used the option to set data to a specific identifier the workflow would be hindered, or they would see the data. I am currently going to test this with a space value
