Be Able to Set Different Times for Different Days with Automation in Workflows

I want to be able to set a different time for certain days. Monday-Friday might be the same, but Saturday's would be a smaller window of time so we are not bugging people too early or late on the weekends.
Ex.
Mon-Fri (8:00am-7:00pm Based on Contact Timezone)
Sat (10:00am-4:00pm Based on Contact Timezone)

Additionally, having an area in our account settings to set different dates for Holidays/No Automation and make sure none of the emails or texts go out on those selected dates.
Nothing worse than losing a potential client because we didn't turn off all our automation and something goes out to them on Thanksgiving or Christmas......
