Although I wish invoices had a dedicated Shipping and Handling field, I am able to add my own Product and call it Shipping Fee (delivery, parcel, S&H, and any other naming variations)... HOWEVER, for sales tax reporting, there is no relevant Product Tax Code to choose.
Although I don't know why it's there or what it means, I chose to map it to
Optional
(yeah, that's all it's called) so that I can add it and so that it is a non-taxable product.
